This topic will contain massive spoilers.
I know there are a few bosses in this game that people have trouble with, so, I might as well list them all here with their stats and strategies. All strategies are based on the fact that the basic strength party(Albert, Dart, and Kongol) will be used. Some abbreviations will be used but they shouldn't be too hard to figure out.

Disc One.
1) The Commander + 2 Sandoran soldiers
HP: 16-18
Soldier's HP: 5-6
Rank: Easy
Very simple, seeing as he's the very first boss of the game. Kill one of his soldiers and the other will run away screaming. Keep attacking. If it's your first time playing, try completing additions. Eventually, the Commander will power up and doing a two slash attack(big whoop). He will heal himself half way through but it doesn't do much...
2) Freugal + 2 Helena Wardens + 2 Senior Wardens
HP: 100-106
HW HP: 11-12
SW HP: 24-26
Rank: Easy-Medium
This battle can be annoying... First, Freugal can't be attacked at first. You must defeat the Helena Wardens first. They are very easy, so just have Lavitz poke them with his stick. When they are dead, Freugal will summon Senior Wardens. These guys are a bit tougher. Their attacks are more powerful than the previous wardens but not too bad. Attack them just the same. However, when they die, they use a magic spell that attacks the whole party(they don't play nice). Now focus on Freugal. His attacks are strong and can kill you if you're not careful. His rock throw hurts and his slam attack is no different. Low on HP? Use the guard command. You regain 10% of your HP without using up an all important item and you cut all damage to you by half. If you have any, use Burn Outs and Spark Nets, they do significant damage compared to your normal attacks. Be patient and the big guy will fall hard.
3) Urobolus
HP: 272-283
Rank: Medium
This guy is a bit tricky. For one, he can poison you. Second, he rises above the battlefield, when beaten up enough, nullifying all close up attacks. Now, when poisoned(you should have picked up Body Purifier(s) on the way over), have Shana use them. Don't waste an attack from Lavitz or Dart. Eventually, the snake slithers away and positions itself higher up. Lavitz and Dart can't reach from down there, so use left over Spark Nets and Burn Outs. Shana can still attack with her bow so let her do so. When you do enough damage, or kill him completely(the magic can go over Urobolus' HP limit so you may or may not get to hit it again), he will slither back down and you can deliver your final blow(s).
4) Sandora Elite
HP: 271-288
Rank: Medium
This guy is a bit tougher. His magic attacks will hurt you(especially Lavitz). Attack him until he splits into three. You have to hit the real one three times until this is over. First hit the left one, then right, then center(This has changed sometimes, but he usually is in this formation). Now comes the magic. Your additions are key to cause maximum damage.
5) Kongol
HP: 220-233
Rank: Medium-Hard
This guy can be tough. If you haven't figured out additions yet, you need to practice. When you damage him enough, he will drop his axe and use his hands. This is bad for you because if you don't complete an addition attack, he counters with a big Giganto smack. He will eventually start attacking both of your characters so guarding would be a good idea in this battle too. When you have done enough damage, you will get a final blow scene that doesn't turn out too well for Dart...
OoC: If you choose to do the "sidequest" and save the Knighthood from impending doom, you will encounter a Commander who is much like the first boss battle, only with more HP. Just attack.
6) Virage
Head HP: 360-383
Body HP: 230-240
Arm HP: 44-56
Rank: Medium
He isn't that hard but he can do some damage. As for what part to go for, you might as well take him out quickly. Attack the head with all you have. Go Dragoon and use magic(Astral Drain is very good. It heals your party members while damaging your opponent). Have Lavitz use the items because, what else can he do? The Virage can smack you with its arm or use its Laser attack. The Laser attack is dangerous and can cause over 100HP worth of damage. Be careful and make sure lavitz guards because it can damage him badly(considering he isn't a Dragoon and is weak against magic). Keep attacking with magic and additions and he will fall without much trouble.
7) Piton aka. Fire Bird
HP: 613-640
Rank: Medium
You may think he is hard with all that HP, but do not fret, for he is much easier than he looks. Piton can attack all party members for a lot of damage as well as call forth four little fireballs that count as regular enemies(they all attack one person). As you may realize, Dart's magic may not do as much damage because fire on fire equals more fire. I prefer to use his basic Dragoon attack(can be annoying to get perfect but is somewhat good). Rose's Astral Drain works wonders and Lavitz... well... can hit things. The best way to do this is to have Lavitz take out and fireballs Piton summons and have Rose and Dart focus on Piton. He will fall quickly with all the damage you're doing.
8)The Greham + Dragon
HP: 400
Dragon's HP: 453-472
Rank: Medium
Usually, the etiquet is to take out the enemy then the master. Not in this case. Take out the Greham first because his attacks hurt... a lot! Just take him out as quickly as possible. When he's done, he'll retreat. Then focus on the Dragon. Watch out for his poisonous and fear causing anal liquids. I hope you bought mind and body purifiers. The Dragon can power itself up too, but that's nothing to worry about. When he dies, Lavitz gets a surprise.
9) Drake the Bandit + Bursting Ball(hehehe) + Wire
HP: 1268-1350
BB HP: 68-74
Wire HP: 117-128
Rank: Medium-Hard
This battle plagued me on my first playthrough. Drake's attacks are powerful and can be protected by that stupid wire wall. You know the basics. Attack him until he summons his wire wall. Attack the wire wall to destroy it and continue attacking Drake. He will then summon bombs. They can hurt a lot so take them out as well. Keep attacking Drake but when his HP gets low, he will heal himself for 360 HP! keep up the fight, go all out, use Dragoon and any magic items to take out this little jerk. He will repeat the bombs and wire wall sometimes but use the same strategy above to take him out.
10) Shirley
HP: Unknown
Rank: Easy
This is a different boss. No fighting here. You don't attack poor old Shirley, just answer her questions correctly. Don't worry, a wrong answer won't kill you, just make her ask it over. My tip, be nice.
OoC: The Hero Contest battles are not real boss battles in my eyes, so I won't go through with them.
11) Jiango
HP: 1236-1280
Rank: Medium
I hope you grabbed that Satchet. It puts the beast asleep(and causes 10 HP worth of damage, which puts you in a good head start =D). It can last for a while or a short time so be quick with whatever you have in store for the creature. Also, if you leveled up your Dragoon a bit(maybe even up to Final Burst), that would work wonders. When the beast wakes up, he can cause confusion(use mind purifiers) and attack your whole party by causing stalagtites falling on them. Rose could be hurt a lot here, due to her semi-low physical defense. Keep attacking with magic and additions and he will fall big time.
12) Freugal + Guftas + Rodriguez
HP: 1080-1138
Guftas HP: 513-575
Roddy HP: 385-430
Rank: Easy-Medium
Freugal just won't quit... Word-to-the-wise, take out Guftas first(the dog) because he can cause confusion. Then take out Rodriguez the bird. When he's roasted, attack Freugal. That's about it really. Freugal is much weaker than his pets so guard when injured and attack to bring down the Hellena Warden for good. And for a change of pace, Lavitz gives the final blow.
13) Kongol
HP: 1158-1198
Rank: Easy-Medium
Persistent little... big guy isn't he? And he's got some new duds this time, eh? Well, we'll have to cover them with mud now, won't we? Same thing with the additions as last time. An incomplete one results in a counterattack. Now, his attacks hurt a little more than before, but you can take him out quickly. If Albert is using Gust of Wind Dance(and you can complete it) it can do several hundred points of damage to the Giganto, so get practicing. Do not use your Dragoon Special on Kongol, because there is a fight harder than anything else coming up OR you can use it, kick his ass, then go back down and charge your Dragoon back up. That's what I did =P.
14) Emperor Doel & Dragoon Doel
Normal HP: 800-850
Dragoon HP: 2100-2150
Rank: Hard
This is a toughie. In the first few seconds, DO NOT use your Dragoon special. Take down his regular form first, and when he changes into a Dragoon, unload everything you've got on him. Doel has a few tricks up his sleeves, and it's not cheap high quality fruit. He sends a beam of electricity at one character. And now for the second attack. This is the most dangerous in his and any other arsenal I have ever seen. He throws one of his swords up into the air and it collects electricity as well as causes a little lightning storm indoors(how nice). He will slash each character once and the fly up to get his other sword. He then collects all the electricity and throws it back down at you. It then mushrooms up into a nice purple nuclear explosion(pretty and it hurts... it's like a woman). If Albert is a level 2 Dragoon(which he should be even higher than that) use Rose Storm, it cuts all the enemy attack damage in half. When he has taken enough damage, he will put up a shield for a few rounds. He is invulnerable now so any attacks won't work. If you're still in Dragoon form(which has happened to me a lot) do not use your magic. Why waste it when it can't hurt him? Use normal Dragoon additions. Then guard until the Shield drops. Keep attacking and the Emperor will fall. Pat yourself on the back, if you can.
